2012 has been a busy year for we Duyvkens but we've found our feet and life has a particularly nice rhythm at the moment. We're making plans for the second half of the year and trying not to freak out about it being June already. Some of those Plans-with-a-capital-p involve wrapping up a few long term projects (including, hopefully, a large part of the renovation) which should free things up a little in 2013 making room for some serious relaxation and some fun short-term projects.
One of the things that JW and I have been working on is a chocolate chip muffin recipe. We've spent lots of time together tinkering with quantities and ingredients and have come up with a recipe that makes lots of lovely, moist muffins. They have a slightly crunchy crust and are delicious fresh out of the oven. I assume they would also keep quite well but I haven't had the opportunity to test that out yet because everyone loves them. JW is very proud of how much the kids love these, it's very sweet.
I've loved working on this with her. I think we might try perfecting our nutmeg cake next.
JW's Muffins For the Big Kids
2 1/2 cups self raising flour
3/4 to 1 cup raw sugar (depending on taste)
1 tsp vanilla extract
1/2 cup vegetable oil
300g sour cream
3/4 cup of choc chips
Combine all ingredients (except the choc chips) and beat for 3 mins on medium speed.
Stir the chocolate chips through the batter.
Spoon into greased and floured cupcake pans.
Bake at 180C for 16-18mins or until skewer inserted in the middle comes out cleanly.
Yields 18-20 super delicious chocolate chip muffins.
